I discovered this perfect summer salad when we travelled to the island of Pantelleria back in 2018. It's a typical dish from the island that combines some of my favourite ingredients into a delicious salad.

I try to have a jar of pickled onions in the fridge at all times. I like to add them on sandwiches or on top of rice bowls. In salads they are a good alternative to fresh onions.
