No-Frills Tomato Sauce

Sometimes all you need is a bowl of pasta with some delicious tomato sauce. My go-to method is almost too simple to call this a recipe and only uses a handful of ingredients that you should always have in your cupboard. This tomato sauce gets better the longer you let it simmer on the stove.

Ingredients

Makes approx. 4 portions.

  • 3 onions, chopped

  • Olive oil

  • 2 tins of tomatoes

  • Tomato puree

  • 1 garlic clove (or more if you like), peeled

  • Sea salt, pepper, oregano, bay leaf

  • Parmesan or pecorino, grated

  • Pasta of your choice

Method

  1. Add the chopped onions and olive oil to a heavy-bottomed pot, put on medium heat and stir to coat the onions in olive oil. Turn down the heat and cook the onions for at least ten minutes. Make sure the onions do not turn brown.

  2. Add the tomatoes and some water (I like to rinse the tins with a bit of water and add that to the pot). Follow up with a squeeze of tomato puree and garlic. 

  3. Add the sea salt, pepper, oregano, and bay leaf along the way. 

  4. Bring your tomato sauce to a boil, then lower the heat again and let the sauce simmer for as long as you can. Stir occasionally.

  5. Meanwhile, cook the pasta of your choice according to the instructions on the package and grate the parmesan. 

  6. Drain the pasta and mix it with the tomato sauce.

  7. Serve with pecorino or parmesan on top & enjoy!
